this follow-up edit tell how this problem resolved.

through numerous emails , forth mr mark bu microsoft support, , engineering team found solution after sent them dump file of windows explorer. 

all had (and i'm hoping works else bizarre glitch) go to:

start -> run (or keyboard windows icon + r), , type shell:appsfolder.

once applications folder appeared scrolled down mail app (or i'm guessing whichever app you're having problem with), right-clicked on , "ta-daaa" - 'unpin taskbar' option appeared! clicked on that, mail app disappeared taskbar , celebrated idiot!

just sure though, went normal start menu, right-clicked on mail app there, , selected 'pin taskbar'. worked, , right-clicked on mail icon in taskbar , now, first time since installing creators' update 2 months ago, 'unpin taskbar' option.... , works every time too!!!

so, thank mark bu , engineering guys put in effort find fix minor frustrating issue. 

i hope can other people may pulling hair out because of this... :-)
